Šokol is a traditional delicacy from the area around Zadar, especially from the town of Nin and the surrounding villages. This delicacy is made from pork neck that is dried and aged in a special way, giving it a specific taste and aroma. The process of preparing šokol takes several months and begins with salting the meat, which is then left to stand to absorb the salt. After that, the meat is marinated in red wine and spices, which gives it a rich aroma. The next step is placing it in a net and leaving it to age for several months, drying it in the bura, a cold wind that comes from Velebit, which contributes to the special texture and flavour of šokol. Each family has its own secret recipe and method of preparation, making šokol unique and special. This delicacy is most often served sliced into thin pieces as an appetizer or with wine.
