Dishes Under the Peka

Peka is a centuries-old tradition of preparing food under a Peka made of wrought iron directly on the hearth or in a vessel on the hearth. Before the advent of stoves, Peka was common rural food, and today it is a sought-after specialty in restaurants. In the lower part of the Peka, a vessel with a minimum diameter of 40 cm, we put a little oil or fat and arrange the meat in larger pieces that we have previously dried, rubbed with salt and spices, and add potatoes and other vegetables. Then we place the vessel with the meat and potatoes on the heated hearth and cover it with an iron bell, which is covered with embers and warm ash from the outside, so the food is baked from both the bottom and the top. The bell has a rim that holds the embers. Since the aromas concentrate under the lid during the cooking of the meat, the result is juicy and very tasty meat, while the simultaneously cooked and baked potatoes have a special flavour as they are soaked in the juices from the meat and vegetables the entire time. Masters of Peka know that the secret to its perfect preparation also lies in the embers, which must be carefully maintained for several hours to ensure an optimal baking temperature.
